- 2/3 cups White flour
- 1 1/3 cups Whole wheat flour
- 1 tsp. salt
- 2 tsp. Baking powder
- 1/2 cups Chopped nuts (such as walnuts)
- 1 egg
- 2 tbsp. Honey (or Molasses, or 1T honey, 1T sugar)
- 1c Milk (or Soy milk)
- 1/4c Vegetable oil
- 2 or 3 bananas, mashed
Directions
Two muffins prepared from this recipe.
- Preheat oven to 400 degrees Fahrenheit.
- Grease a muffin tin.
- Cream eggs, honey/molasses/sugar, milk, vegetable oil, and bananas.
- Combine dry ingredients, then mix sparingly with wet ingredients. Lumpy batter is to be expected.
- Bake for 20 to 25 (probably 25) minutes.
Makes about 20 2in muffins.
